Kalam Polo Shirazi (Persian Cabbage Rice)

Ingredients for 8

4 cups Rice                                             2 medium onions

1 lb ground meat                                   1 cup  each fresh Basil, tarragon, Leeks, Dill – chopped

2 medium cabbages                              1 teaspoon Turmeric  (+ 1 Teaspoon crushed cumin optional)

1 cup vegetable oil                                1 teaspoon Salt / Pepper

Instructions

1. Prepare rice as for Chelo ; before steaming add the meat and cabbage mixture below

2. Slice and Fry one onion till golden; place aside

3. Grate second onion and mix with meat, Turmeric, Salt / Pepper

4. Form meat mixture into small meatballs and fry in same oil onion was fried in

5. Add sliced cabbage, and fry. Add onions back in to mixture

6. Place some oil and rice at bottom of a pot and add alternate layers of meat /cabbage mixture, chopped herbs and rice.

7. Apply cloth to top of pot and steam as for chelo
