Salad Olivieh

This typical Persian salad is a variation of the Russian “Salad Russe”. Every family has their own favs that they put in . It will stay several days in the fridge and will satisfy many meals and many in-between snacks but tends to disappear quickly! I always think of Aunty Nazi when I make this as she is the expert and takes pride in cutting the pieces very finely


Vary amounts as needed to your taste

  1. 2 chicken breasts boiled and diced into  1/2 cm cubes ( or left over rotisserie chicken bits)
  2. 1 packet frozen peas, cooked and cooled ( some add the peas and carrots mixture)
  3. 4 potatoes, boiled and diced into 1/2 cm cubes
  4. 4 eggs , hard boiled and  diced…
  5. 1/2 cup of black olives diced…
  6. 5-6 Persian pickled cucumbers diced…
  7. 3 Tbls Mayo
  8. Salt and pepper to taste
  9. Some add some lemon juice and dijon mustard to the mixture but I have not tried it.
