Gazpacho Andalusia

Ingredients for 4 

2 cloves garlic

3 Tbls olive oil

5 Tomatoes

1 chopped onion

salt / pepper / paprika to taste

1 1/2 Tbls vinegar

250 ml cold water

200 gm peeled / chopped cucumbers

4 slices bread or croutons

ice cubes

1 green pepper chopped

Keep some diced cucumbers, onion and tomatoes for garnish



In a big bowl smash the garlic

Add olive oil to obtain a paste

Add onion, salt. pepper, paprika, vinegar and water

Put in fridge 30 mins

Ten minutes before serving add ice cubes, tomatoes and cucumber and put in mixer

Serve with Diced onion,  green pepper, croutons and cucumber
